Hi everyone!!
We’ll talk about all the exciting racing in Charlotte last weekend in a moment; since we’re headed to Dover and those famous crabcakes, I thought I’d offer my own recipe for crabcakes!!
CRAB CAKES
1 beaten egg
1/2 cup finely crushed saltine crackers
1/3 cup milk
1/2 teaspoon dry mustard
1/8 teaspoon white pepper
1/8 teaspoon cayenne
1 7oz can crab meat (drained and flaked)
1 tablespoon snipped parsley
Oil – I use olive
Combine all ingredients EXCEPT the crackers and crab
Place in fridge to firm up – usually about an hour or so
Add the crab and saltines and mix well using your hands
Shape and chill for 30 minutes
Heat the oil, add the cakes and sautee for 3 – 4 minutes per side or until thoroughly cooked.
ENJOY!
Now, back to Charlotte! Wow, what an exciting weekend for racing! We had spin outs, cars confiscated, blown tires, fights between crews and a couple of surprise winners! Our very own Kat was there visiting family, other community members and of course, attending the race…..it was great she got to see her driver win too!!!
Well, Jeff ended up with a really great finish after some pit strategy….whew! I was nervous for a minute there! I was surprised to see Jimmie’s engine blow; been a long time since that has happened and I hope it will be an even longer time before we see that again. I’m pretty sure we were all worried about the HMS guys when that happened. With the blown engine, Jimmie dropped a few spots, but Jr. is solidly in 3rd. I’m very happy Jeff maintained his position, but I’m looking forward to watching him move up.
OK, stats from last years Dover race:
Martin Truex Jr. won his first Cup race and $295,045
Ryan “The Rocketman” Newman was on the pole
Margin of Victory: 7.355 seconds
Yes, this DOES come out of a stat book – my memory isn’t that good!! 
I appreciated all your comments and thoughts on our last blog about the current car; I still think they may need some fine tuning, but we’ll just have to wait and see…..Looking forward to seeing your thoughts on the Charlotte races, including the fines and penalties given to Haas/CNC Racing and what you think is in store for this weekend.

the crabcakes sond realy good. ya i ageree on jeff moving up he hasent had a verry good year as in the past, but no matter how bad he does in a race hes still a winner
