I manage a supply company that caters to construction and offshore industries, etc. Having mostly male customers, I try to keep in the know about different sports to keep the banter going. One day a customer started talking about NASCAR racing. Naturally, I had to keep the customer happy and learn about this NASCAR.
And that was all it took. I couldn’t resist. Hook, line, & sinker, I was a goner.
Each year my passion for NASCAR racing has grown. I love it. I like talking about it. I like watching it. And every weekend that’s where you’ll find me, watching NASCAR.
Now that I have a computer I hope I can converse with you all about NASCAR.

Crawfish etouffe recipe
1 lb crawfish
1 cup seasoning blend of chopped onions, green onions, bell pepper
4 Tbsp tomato paste
4 Tbsp flour
4 Tbsp butter
2 Tbsp lemon juice
2 cups water
Cajun seasoning to taste
Saute’ seasoning blend in butter until tender, about 15-20 minutes. Add flour and stir constantly browning slightly. Add tomato paste and blend well. Add water, lemon juice, cajun seasoning, and crawfish. Heat to boil. Reduce to simmer and cook 1/2 hour. Serve over rice or pasta.
You may substitute any seafood or meat with this recipe. Just make sure it is cooked thoroughly. Enjoy!
